About

At our brewery, we bottle this Tokubetsu Junmai in spring, store it in a refrigerator at an appropriate temperature, and adjust it so that it reaches its ideal state of maturity at the time of shipment. It can be enjoyed at a range of temperatures, from chilled to lukewarm (nurukan). It is, of course, recommended with Traditional Light dishes. On the flavor map it sits closer to the center, so when served chilled it also pairs well with Fruity Light dishes, and when served lukewarm it pairs well with Traditional Rich dishes, making it a versatile sake. In autumn, when more seasonal ingredients become available, you can enjoy it with a wide range of dishes, customized to your own taste.
