Tokyo
東京都12 breweries, 28 brands, 62 bottles. 1 brewery welcomes visitors
Even in the middle of a big city, Tokyo is home to sake breweries that continue to preserve traditional sake brewing.
Although Tokyo does not have many sake breweries, they continue to brew with great care, drawing on water systems such as those of Okutama. Their location in and near a major city also gives them a strong ability to reach audiences, and their efforts tend to emphasize individuality and storytelling.
Sake of Tokyo
Tokyo's sake brewing developed after the Edo shogunate ordered the production of "Gomen Kanto Jozake" (御免関東上酒). Centered mainly along the Tama River, the region produces light, clean sake with depth, made with medium-hard water. Breweries actively promote "Tokyo local sake" (jizake) through events such as tasting sessions and brewery tours.
