About

Sato Tobei is the name of the founder. This is a junmai sake made with kimoto (traditional yeast-starter method, yamahai shubo), which draws on the natural power of the brewery's founding era. In yamahai shubo, the yeast is left to develop naturally for more than twice as long as in a sokujo shubo (quick-brewed yeast starter), increasing the acidity and amino acid content and producing a rich flavor. Brewed with this yamahai shubo, Azumaryu Sato Tobei turns the fermentation acidity into a harmonious umami. It has a rich yet refreshing taste and a firm, substantial character that never grows tiresome.
