About

Asterisk is a dry junmai sake made to the 'Fuyu Hiyazake / Silky Snow Time' specification. It is intended to be enjoyed chilled, deliberately served as reishu (chilled sake) in a warm room at a cold-weather banquet, rather than warmed as atsukan (hot-warmed sake). Many sakes become easier to drink when warmed as atsukan, which reduces the unpleasant aged aroma known as hineka (aged-off aroma), as well as heaviness and strong distinctive character. This sake, however, was designed to be free of such character from the start when drunk chilled, aiming for a smooth, snowmelt-like mouthfeel and a light, nimble body. We used Dewa no Sato, a low-protein rice that Eikofuji uses in many of its sakes, polished to 80%. Our aim was a settled ginjo aroma and a clean, well-balanced palate that does not feel thin. We also aimed for a food-friendly sake that can be enjoyed chilled or warmed as atsukan, and that does not tire the palate easily. The name 'Asterisk' comes from the Latin 'asteriscus', which itself derives from ancient Greek. It means 'little star.' The name was chosen to evoke small, sparkling stars shining and flowing into the mouth when the sake is tasted. We hope you enjoy this sake leisurely at a delicious and pleasant winter banquet.
