About

The major differences between sake yeast and wine yeast are fermentation power, meaning the ability to convert sugar into alcohol, which is relatively weak in wine yeast, and the tendency of wine yeast to express citric acid, the acid found especially abundantly in lemon juice. In other words, wine yeast tends to produce sake with lower alcohol content and more pronounced acidity. The greatest appeal of sake brewed with wine yeast is that for people who find sake difficult to enjoy because of the musty steamed-rice aroma of freshly cooked rice (mure-ka), the white grape character from the wine yeast can mask it, making the sake easier to drink. It also pairs well with Western cuisine. For 2023, we adopted Wakamizu, a rice variety in the Gohyakumangoku family, and renewed the label to make the sake clearer and easier to drink. Its positioning remains firmly that of a sake. It pairs well with dishes using olive oil, such as Italian cuisine, and with seafood such as raw oysters with white wine, and in some cases it may even work better than a simple white wine. We hope you will set aside preconceptions and enjoy this bottle with a wide range of food pairings.
