About

A Junmai Daiginjo muroka nama genshu from the Eikofuji series, which has remained a steady favorite within the series' unfiltered, undiluted nama lineup. It is brewed with Sake Mirai, a sake rice bred over 18 years by Takagi Tatsugoro of Takagi Shuzo Co., Ltd., the brewery behind Juyondai, a sake of unrivaled popularity nationwide and in Yamagata Prefecture. In Takagi's words: 'Over eighteen years, through repeated crossbreeding and selection, we developed a sake rice with short culms, cold tolerance, large grains, and disc-shaped central white cores, suited to the climate of the Ushu region of Michinoku. We named this rice Sake Mirai.' The variety suits Yamagata's climate, is well suited to growers, and is considered highly suitable for brewing. Takagi bred three sake rice varieties: Ryu no Otoshigo, Sake Mirai, and Ushu Homare. Alongside Sake Mirai, Eikofuji brews two versions of Ushu Homare under the name Junmai Daiginjo Muroka Nama Genshu Ryugin Kosho. The maternal parent of Sake Mirai is Tamanae, used in Junmai Daiginjo Muroka Nama Genshu Survival, and the paternal parent is Miyama Nishiki, also used in Junmai Daiginjo Muroka Nama Genshu Kurogitsune. If you have the chance, we hope you will taste Sake Mirai alongside Tamanae and Miyama Nishiki, comparing them with the lineage of each variety.
