The 60% polish junmai ginjo and its juicy, fresh description point to a fruity, lifted aroma. Genshu muroka nama adds some richness, while low acidity of 1.4 and a near-neutral SMV give a soft, slightly sweet, lively profile.

About

This sake, long loved as 'Akizake' (autumn sake), was rebranded as 'Gravity' in 2021. In sake production, it is not uncommon for each year's brew to be made to taste much like the one before. However, Eikofuji has continued to renew its techniques through large-scale investment every year in steaming vats, koji rooms, bottling lines, and cold storage. As part of that ongoing effort, we decided to rebrand so that we could offer this sake to you as an even better product, and we completely refreshed its image. Notably, this sake is the product of a three-year joint research project with the Institute for Advanced Biosciences at Keio University in Tsuruoka, Yamagata Prefecture. Throughout the project, every component was analyzed and recorded as data daily, from the preparation of the shubo (yeast starter) through pressing. We tracked what changes in the sake when various steps are taken, and which components, present in greater or lesser amounts, produce particular flavors. This basic research became a major pillar that greatly improved the precision of Eikofuji's sake quality. Because this sake sits at the center of quality control for Eikofuji's unfiltered, undiluted sake (muroka genshu), it demands great care. We believe that this care is reflected in a more precisely finished flavor. We hope that, like a strong gravitational pull that draws everything in, it will draw you in as well.
