About

This is the first release in the Furosen line of yamahai-brewed Junmai Ginjo muroka nama genshu. Nakagumi (the middle portion drawn from the fermentation tank) was selected from sake brewed with the brewery's resident wild yeast and bottled. The nakagumi portion gives a fragrant, full-bodied character. Yamahai brewing adds a clean finish (kire) without the heaviness or harshness (shikkosa) sometimes associated with the method. Yamada Nishiki's delicate qualities bring the whole into a finely balanced, unfiltered, undiluted nama genshu. It can be enjoyed chilled or warmed (kan), and it offers satisfaction across a range of serving temperatures.
