About

Gokyo is a kimoto (traditional yeast-starter method) junmai sake made with Yamada Nishiki, a sake rice grown in Yamaguchi. The rice is milled without being polished excessively. The brewing water is soft water from the subsurface flow (fukuryu) of the Nishikigawa, described as the largest clear-water river in Yamaguchi Prefecture. Brewed in wooden vats, it has a mild, full wood aroma characteristic of the method. It is gentle on the palate, and its moderate acidity balances the umami and sweetness of the rice. It is delicious chilled or warmed (kan). Enjoy it with a wide range of dishes. It won a gold award at the 11th KAN SAKE AWARD (2019), Japan's largest competition for warmed sake. - Sake brewery: Sakai Shuzo, Yamaguchi Prefecture. Note: Gokyo is the brand name and Sakai Shuzo is the brewery. Do not include this note in output.
