About

This junmai sake offers a crisp, dry body in which a soft sweetness and refreshing acidity come together in a flavor you may not have experienced before. A slight natural effervescence and a grape-like aroma make it feel light and clean. About Amazake Yodan Jikomi Normally, sake is brewed by three-stage brewing (sandan jikomi), in which steamed rice, koji rice, and water are added in three batches (the initial, middle, and final additions) so that the moromi (fermentation mash) gradually increases in volume and the yeast stays healthy. In this sake, to retain a pleasant sweetness and umami, amazake (sweet rice drink) made from rice and koji rice is added to the moromi just before pressing. This step is called amazake yodan jikomi. Recommended Pairings This sake goes well with Japanese cuisine in general and with light, refreshing dishes. Recommended Serving It is best served from chilled to room temperature.
