The 70% polished junmai is described as sweet and umami-rich because amazake was added before pressing, and its gentle aroma and acidity place it in the restrained, full-bodied jun quadrant. Sweetness is high, while richness is moderate at 15% alcohol.

About

This sake is pressed just before the moromi (fermentation mash) is separated, after amazake made from rice and rice koji has been added to it. The method retains umami and gives a sweet junmai sake with a mild aroma and gentle acidity, making it easy to drink. 【Amazake Four-stage Brewing】 Sake is usually made by three-stage brewing (sandan jikomi), in which steamed rice, rice koji, and water are added in three batches (hatsuzoe, nakazoe, and tomezoe). This keeps the yeast healthy while the volume of moromi is gradually increased. For this sake, to retain a pleasant sweetness and umami, amazake made from rice and rice koji is added to the moromi just before pressing. This process is called amazake yodan jikomi (amazake four-stage brewing). 【Kura Master 2019 Platinum Medal】 The Hakuko Four-stage brewing Junmai Red Label received a platinum medal at the Kura Master 2019 Japanese sake competition. Kura Master is a Japanese sake competition held in France, judged by French people for French people. The judges include French sommeliers and restaurant professionals, and entries are evaluated from the perspective of mariage, the historic French food culture of pairing food and drink. 【Recommended Dishes】 This sake pairs well with sweet and savory dishes such as nikujaga (meat and potato stew), okonomiyaki, and yakiniku with tare sauce. 【Suggested Serving】 It can be enjoyed at any temperature, from chilled to hot sake (atsukan), depending on the dish or personal taste.
