About

Made with the finest sake rice and good water, this sake is brewed with great care. It offers a balance of delicate aroma and the fullness of flavor characteristic of junmai sake. This is a limited release with a serial number. The number of bottles varies by brewing year. Yamada Nishiki, the Pinnacle of Sake Rice All of the sake rice used for Sarasoju Junmai Daiginjo is Yamada Nishiki of special grade or higher, grown in Yokawa-cho in the Special A district of Hyogo Prefecture. Yamada Nishiki is considered the finest sake rice, and Hyogo-grown Yamada Nishiki is among the best. Yokawa-cho is known as the premier production area within that district. Generous Rice Polishing Near the surface of a rice grain are proteins and fats, which turn into off-flavors (zatsumi) in sake. The center of the grain is made almost entirely of pure starch. For this reason, the rice is milled down so that as much of the center as possible is used for brewing. This is called 'polishing the rice.' The more the rice is polished, the fewer of these off-flavor components remain, resulting in a clean sake. For this Daiginjo Sarasoju, the milled rice is 40% or less of the weight of the brown rice. In other words, more than 60% of the premium Yamada Nishiki is polished away. Food Pairings It pairs well with Japanese cuisine such as sea bream sashimi, steamed sea bream, and clams steamed in sake. Serving Suggestions Serve chilled or at room temperature, according to the dish and personal preference.
