The 4+ year aging, caramel-like aged aroma, amber color and koshu attribute point to a complex, aged profile in which aroma is led by maturation rather than fruit. The described rice umami and full texture, with 16% alcohol, suggest a rich body and moderate sweetness.

About

Aged for more than four years in tanks inside the brewery, this glossy amber sake offers a caramel-like aged aroma. It has a full, rounded flavor that carries the savory richness of rice. [Sake Rice: Senbon Nishiki] Senbon Nishiki was developed from Yamada Nishiki, said to be the finest sake rice, from Hyogo Prefecture, and bred to suit the climate and terrain of Hiroshima. Koji is somewhat difficult to make with this rice, but its low protein content results in a clean, light-bodied sake (tanrei). It also develops richer flavor with aging, making it well suited to aged sake. [Recommended Serving] Served at room temperature or warmed to hot (atsukan).
