About
Brewed with craftsmanship and convictions handed down unbroken through generations, this is Hakutsuru's signature product, rich in aroma and refined yet deep in flavor. Hakutsuru Nishiki, a sister variety of Yamada Nishiki, is polished to a high degree and fermented slowly over a long period at low temperature. The moromi is pressed using the low-temperature fukurotsuri (bag-hanging) method, bringing out the apple and pear-like fruity aromas together with the delicate, rounded flavor that Hakutsuru Nishiki provides. This heartfelt Junmai Daiginjo is made using hand-washing of the rice (“tearai”), limited water absorption during soaking, the traditional hand-operated futakoji (lidded koji-making) method, and only shizukuzake (drip sake) that falls naturally without applying pressure.
