Flavor profile So-shu
So-shu — clean and light
The brewery's wording of 淡麗辛口 and a clean finish, together with an SMV of +4, low acidity of 1.3, and 70% polishing, points to a restrained, light, slightly dry profile. The rice-driven fullness keeps it in the restrained-light (so) quadrant with only modest aroma.

About
To give you peace of mind when you drink it, we have insisted on contract-grown rice produced entirely in Japan. The koji rice (kojimai), said to be the most important rice in sake brewing, is Hakutsuru Nishiki grown in Hyogo Prefecture. It is a sibling variety of Yamada Nishiki. The kake rice (kakemai) is Nakate Shinsenbon grown in Yamaguchi Prefecture. We brew with carefully selected rice, the natural water of Rokko, and Hakutsuru's original yeast (Shin Nozomi yeast), drawing out the full flavor of the rice. Enjoy its rounded body and clean finish, a light, dry junmai style.
