About

Made to pair with richly seasoned dishes, this release blends three types of undiluted sake (genshu): a base aged quietly for one and a half years in the brewery, combined with genshu aged for six months and for two and a half years. Isokura ships it with the same aged character every year. As is typical of aged sake, time has softened the edges and brought a mellow, rounded richness of umami, balanced delicately by bitterness, astringency and acidity. Its flavor builds slowly, a craftsmanship that connoisseurs appreciate. Enjoy it at room temperature or, if possible, slowly warmed (kan).
