The text's descriptions of light, refreshing and clean character, together with an SMV of 0 to 2 and 60% polishing, point to restrained aroma and a light body. The undiluted unfiltered nama genshu at 16% adds some weight, so sweetness and richness sit at moderate levels.

About

Crafted by hand with care by the toji and kurabito, using Utsukushima Yume yeast. The sake rice was steamed in a traditional wagama (Japanese steaming kettle). To deliver the freshly pressed, tanrei (light and clean) and refreshing flavor, this release was bottled and stored as an unfiltered Nama Genshu, without heat sterilization, activated charcoal filtration, or water addition. Available in limited quantities. Enjoy its refreshing, light character.
