About
Made with generous amounts of top-grade Yamada Nishiki rice polished to a rice polishing ratio of 30%, this daiginjo was crafted with the skill and sensibilities of the kurabito (brewery workers). The sake is aged for about two years in a room kept at 1°C, which fully draws out its umami and depth before shipment. Its distinctive features are a dignified ginjo aroma, a delicate and clean taste, and a yoin (lingering aftertaste) in which the savoriness returns after drinking. Chilled is of course recommended, and although it is a daiginjo, nurukan (gently warmed) is also recommended.
