About

Made with generous amounts of top-grade Yamada Nishiki rice polished to a rice polishing ratio of 30%, this daiginjo was crafted with the skill and sensibility of its kurabito (brewery workers). After about two years of aging in a room kept at 1°C, the sake is shipped once its umami and depth have been fully drawn out. Its defining features are a refined ginjo aroma, a delicate and clean flavor, and a finish known as yoin (lingering aftertaste), in which the savoriness returns after swallowing. It is excellent chilled, and although it is a daiginjo, it is also recommended lukewarm (nurukan).
