The description of juicy, elegant aroma and rich, pure sweetness points to a fairly aromatic profile with pronounced sweetness. The 55% polishing ratio and junmai ginjo make-up give it more body and weight than a light, crisp style.

About

Pure, rich sweetness, the hallmark of Aiyama rice, is fully expressed in this juicy yet elegant sake. The middle-cut (nakadori) portion is released in spring, unfiltered and unpasteurized (namazake). An usunigori (lightly cloudy) version is shipped in limited quantities in summer. The pasteurized version will be discontinued once the 2016BY (2016 brewing year) stock sells out.
