The yamahai junmai style at 65% polishing and 18% alcohol, aged two years in bottle for a milky texture, points to a full body with restrained aroma. The clean finish suggests moderate sweetness, placing it in the jun (mellow, rich) quadrant.

About

The brewery has gradually increased the number of brewing batches, and the sake has a clean, crisp finish that could be called a modern yamahai (traditional yeast-starter method). Aging it for two years in bottle storage brings out a fine, milky texture. This aging approach is the only one in the Sixteenth Kuroemon lineup. In recent years, many of the brewery's products have moved toward fresh rotation, and I want to focus more firmly on storage aging and suggesting the best drinking window.
