About

Faithfully recreating the traditional Hakushika methods of the Taisho era (1912-1926), this junmai sake has the rich, gently sweet character typical of pure rice sake. In addition to the usual three-stage brewing (sandan jikomi), mochi rice (glutinous rice) is added at the fourth stage, creating a delicate, soft umami and a refined, high-quality taste. This premium sake is a masterpiece that adds a sense of luxury and a special umami to the sake brewed by Umeda Tasaburo, the celebrated toji of Hakushika in the Taisho era. Received a Gold Medal at the Monde Selection for three consecutive years (2013, 2014, 2015). Received a Bronze Medal in the SAKE category at the IWC (International Wine Challenge) 2020.
