About

Made with Miyamizu water (宮水), which has a well-balanced mineral profile, this sake uses only Yamada Nishiki grown in the Special A district of Kato, Hyogo Prefecture. Brewing began by hand during the coldest period of the year (kan no jiki), and every stage was attended to closely, from rice washing and koji making to temperature control of the moromi (fermentation mash), pasteurization, and storage. The sake reflects the skill Hakushika has built through its long pursuit of sake brewing. It has a crisp acidity that leads to a clean finish, and its aroma and flavor are youthful and reminiscent of fresh melon. This junmai daiginjo reflects the technique of Tatsuuma-Honke Brewing, which has aimed to produce clear, richly flavored sake. It received a Platinum Award at the London Sake Challenge 2020 and a Gold Award at the Monde Selection 2021.
