As a 40% polished daiginjo it is strongly aromatic, while 17% genshu strength, unfiltered muroka and bottle aging add body and richness. The free-run shizuku style suggests a moderately sweet, mature-leaning profile.

About

This sake is made by hanging moromi (fermentation mash) brewed in kanzukuri (winter brewing) in sake bags and letting it drip naturally, without any artificial pressure. It collects the shizuku (drops) one by one, producing an unfiltered genshu daiginjo. These drops were then carefully bottled and aged one bottle at a time. In a sense, we invite you to savor these shizuku, in which the passion and spirit of the brewers have crystallized.
