About

Yakimare Kyokai No. 1 Yeast is a junmai sake brewed with kimoto (traditional yeast-starter method). The brewery revived the Kyokai No. 1 yeast after 60 years and, following a century-old handwritten record, brewed it in the style of a hundred years ago. It combines Yamada Nishiki grown in the Special A district of Yokawa-cho, the famed spring water Miyamizu, and the long-lost 'phantom yeast' (maboroshi no kobo) with the techniques of a century past. The result is a rich, full-bodied sake with an outstanding crisp finish. We invite you to try it.
