About

A greeting from Nishimuko (西向), our brewing director and a sake-brewing master who researches and preserves the Tamba-ryu Sakezukuri Uta (Tamba-style sake-brewing songs), and who can sing them as he works. “Rice-only sake” is how we describe this junmai sake made entirely with Yamada Nishiki, designed to let you fully enjoy the flavor of rice. We used 55% Yamada Nishiki and 45% regular rice. Combining the delicate character of Yamada Nishiki with the robust umami of regular rice creates a deliciousness that a sake made with 100% Yamada Nishiki does not achieve. It has been enjoyed by a devoted following of loyal fans.
