Flavor profile Jun-shu
Jun-shu — rich and umami-driven
The text's yamahai-style umami and body, with acidity 1.8, point to a full but restrained profile. SMV +2.5 suggests a slightly dry finish, and the 70% polish keeps aroma modest.

About
Made entirely with Yamada Nishiki rice grown in Jitsuraku, a designated Special A district, this Tokubetsu Junmai is brewed using the traditional Nada method of kimoto (traditional yeast-starter method) to draw out the full character of the rice. It offers a clean richness and savory umami with a crisp finish, and a fine, smooth texture on the palate. It is also enjoyable chilled, but when warmed (kan) it pairs exceptionally well with meat dishes. Awarded gold at the Monde Selection in 2015 and gold at the Slow Food Japan Kanshu Contest 2015.
