About

Fuji-zakura (Fuji cherry) is the prefectural flower of Yamanashi. From this delicate wild cherry, which colors the mountain fields a soft pink as the buds open in spring, a sake original to Yamanashi was born. Yeast was isolated from 328 kinds of flowers and fruits that grow in the prefecture, for use in sake brewing. Through this work, the team discovered that the flower yeast of Fuji-zakura has the characteristic of producing excellent sake.
