The description's rich flavor and yamahai brewing, together with a 60% polish, SMV +3 and acidity 2.0, point to restrained aroma, full body and a moderately dry, slightly savory profile, placing it in the jun (rich, restrained) quadrant. The 16% alcohol and junmai style support the fuller texture.

About

This sake is produced by Shata Shuzo in Mount Hakusan City, Ishikawa Prefecture. Shata Shuzo's honorary master brewer (komon toji) is Naka Saburo, one of the Noto Shitenno (Four Heavenly Kings of Noto). All of the rice is milled in-house. The rich character and balanced acidity typical of yamahai brewing (a traditional starter method that uses natural lactic acid) make this an individualistic junmai sake. Its deep yamabuki (golden kerria flower) color is also a pleasure to the eye. It can be enjoyed at a wide range of temperatures, from chilled to hot sake (atsukan). Nurukan (lukewarm) and room temperature are especially recommended.
