The text's emphasis on yamahai richness (芳醇), umami and aged color, together with the daiginjo polish, points to a moderately aromatic, full-bodied juku profile. SMV +3 and acidity 1.6 suggest a fairly dry, clean finish despite the body.

About

This sake is from Shata Shuzo in Hakusan City, Ishikawa Prefecture. Shata Shuzo is a brewery whose master brewer (toji) is Naka Saburo, one of the Noto Shitenno (the Four Heavenly Kings of Noto). All of the rice is milled in-house, and this Junmai Daiginjo is brewed using Tengumai's original yamahai shubo (yeast starter made by the yamahai method, a traditional approach that does not add lactic acid separately), which draws out the umami of the rice to the fullest. Yamahai brewing gives the sake a full-bodied yet crisp and clean character, a flavor we invite you to enjoy as a beautifully delicious sake. It is also an excellent Ginjo to drink with meals. Aging gives the sake a color that is pleasing to the eye as well. It can be enjoyed chilled at around 10°C, at a temperature cooler than room temperature, or warmed lukewarm at 35 to 40°C.
