About

This is the bag-pressed (fukurodori) pressing of the sake released as Tsuchida Kimoto Betsu-atsurae (special-order). Compared with Tsuchida Kimoto Betsu-atsurae made from the same mash, both No. 5 and No. 10 have a very different character. The bag-pressed version has a very refined taste that is distinctive to fukurodori. A transparent, vivid aroma. A refined, clean mouthfeel. Recommended pairings: white-fleshed fish sashimi, yuzu and daikon amazu-zuke (sweet-vinegar pickles), and itawasa (kamaboko fish cake slices with wasabi).
