This collaboration sake is made with Tsuchida99 using Kyokai No. 6 yeast. "Tsuchida99 UA Version" is brewed with koji for 99% of the raw rice used, and with Kyokai No. 6 yeast, which mellows the sake and enhances its aroma. On top of the refined aroma of No. 6, layers of complex, composite aromas overlap. The aroma is refined and high-quality, like freshly cut fruit. It is not flashy at all; the aroma is natural and mellow. The finish is light and easy to drink for younger consumers and sake beginners, while offering experienced sake drinkers new flavors to enjoy. It is remarkable how much the yeast alters the character. We recommend tasting it side by side with the regular Tsuchida99.
