About

This sake was made for entry in the Annual Japan Sake Awards and the Kanto-Shinetsu Regional Taxation Bureau Sake Competition. It was brewed in keeping with Tsuchida Shuzo's distinctive style. Under current judging standards, winning while holding to that style is a very high bar, and unfortunately it did not win an award this year either. The brewery believes that continuing to pursue this style has meaning and can open new possibilities for the sake industry. The sweetness is refined and gentle, and the palate is delicate yet full-bodied. Recommended pairings include sweet shrimp (amaebi) sashimi, salmon and avocado carpaccio, and vinegared octopus.
