About

Not the sake we originally set out to make, but a sake born from a continuing challenge. It was created through the work of microorganisms that went beyond what we had imagined. It is generally sweet with pronounced acidity, but because the results cannot be reproduced, the character differs greatly depending on the brewing year. It has little quirkiness and a relatively easy-drinking finish. Aging it at home is also recommended. It pairs well with meat dishes and Western-style cuisine, and goes nicely with marinades, carpaccio, and Japanese vinegared dishes (sunomono). Free from the conventions of sake, it can be enjoyed with a wide variety of meals. Recommended chilled and warmed (kan).
