About

At last, we have arrived at an easy-drinking richness. Tsuchida 12 was pursued as a sake that is easy to drink yet has body. Its alcohol content is 12%, a lightness that is low for sake. I believe one of the challenges facing sake is its high alcohol content. A heavy mouthfeel can even cause people to stop eating. Of course, if you simply want to lower the alcohol, adding water will do it right away. But that also thins out the flavor, leaving a sake with no satisfying body that is not very enjoyable. "A sake with plenty of rice flavor dissolved into it, with umami, yet light on the palate." We believed that if a sake like this could be made, more people would enjoy sake. Tsuchida 12 was made with that thought in mind. Recommended ways to drink it are well chilled in the refrigerator, or warmed to a lukewarm temperature (nurume no kan). It is a food-pairing sake that can be enjoyed across a wide range of dishes, from Japanese to Western. Rice polishing ratio: koji 90%, kake 70% (kake: rice used for the main mash)
