Sake of Fukui

Fukui is rich in high-quality water, including water from the Hakusan mountain range. Gohyakumangoku, its leading sake rice, is grown in volumes among the highest in Japan. Just under 40 breweries are spread across the prefecture, in places such as Fukui, Katsuyama, Ono and Tsuruga. In recent years, the prefecture's original "Fukui Urara" yeast was developed, and it is now used by breweries in the prefecture to make local sake. Many of the sake used to be full-flavored with plenty of umami, but sake that are light, dry and clean on the finish are increasing.
