About

Because the rice is ungraded and has no white core (mushin-shiro), we polished it to the limit that is possible. Even skilled farmers produce about 10% ungraded rice. Because it cannot be used for designated-name sake (tokutei meisho-shu, sake that meets official grade criteria), it becomes an economic burden on farmers. This sake addresses that issue. One might expect a colorless, clear sake from such high polishing, but it has a powerful and distinctive charm. Available in limited quantities at Dassai Store and airport duty-free shops.
