About

The previous CRAFT Dassai was made by pairs of young kurabito (brewery workers) who took on every step of the brewing process, from rice washing through to pressing (shibori). Each pair expressed its own interpretation of Dassai-rashisa (the character of Dassai). Brewing in pairs remains the same, but Dassai Torimon expresses the skills and knowledge the kurabito have built up as brewers. It serves as one stage on the path to becoming a fully qualified Dassai no Takumi (Dassai craftsman).

Centrifugal separation, origarami (sake with lees left in suspension), unpasteurized namazake.
