The refreshing, transparent ginjo aroma and the sharp, not-too-sweet umami described in the text point to a fragrant, light style. The negative SMV (-8 to -4) adds some sweetness, which is balanced by the genshu richness and clean finish.}

About

The third release in the STARS summer sake series, following Nanahoshi and Shooting Star, which are recommended for hot summer days. This junmai daiginjo is brewed with Manamusume, a brand rice grown in Miyagi Prefecture and named with the feeling of a beloved daughter of one's own. It is characterized by a refreshing umami that remains enjoyable in summer. Manamusume was bred in 1997 (Heisei 9) by crossing Hitomebore as the father with Chiyonishiki as the mother. Its eating quality combines the stickiness of Hitomebore with the softness of Sasanishiki. In the appearance grading of brown rice, its gloss is good and clearly superior to Sasanishiki, and it has fewer chalky white areas (belly white, heart white and milky white) than Sasanishiki. Its eating quality is also rated higher than Sasanishiki, earning the highest grade. The 1,000-grain weight of its brown rice is large at 24.8 g. It is strong in cold and disease tolerance and easy to cultivate, and its yield, quality and eating quality vary little from year to year. For these reasons it can be supplied stably, and it is counted among the next-generation brand rices of Miyagi Prefecture. The aroma is refreshing and transparent, suggesting several kinds of herbs. The effervescence feels as if the stars twinkling in a summer night sky have been swallowed whole. The umami is sparkling and bright without being overly sweet, and the finish is crisp and clean.
