About

This is the second release in the Haru no Ichi (spring market) project, a product offered for advance order once a year. Using Suisei, a popular sake rice grown in Hokkaido, this junmai daiginjo was brewed slowly with YK009, a new yeast strain. Yamagata Prefecture originally developed YK009 for Yuki Megami. It is low in acidity and has strong fermentation power. The result is an unfiltered nama genshu with a light fruity character and a clean, refreshing taste, so it does not feel heavy. Suisei (Kuuiku-shu 170-go) is one of the three Hokkaido-bred sake rice varieties, along with Ginpu and Kitashizuku. It is low in protein, produces few off-flavors, and tends to yield a light, Tanrei (clean and delicate) taste. Many breweries outside Hokkaido now use it. Its grains are heavy and large, suitable for high rice polishing in ginjo-style sake, and it has a high harvest yield. The name Seiten Koro (starry sky voyage) reflects our hope to face the difficult times of the COVID-19 pandemic, Russia's invasion of Ukraine, and many other sorrows. The present is a journey in progress, and we hope to carry it through as one part of a long voyage across the vast starry sky.
