About

Tojo district in Kato City, Hyogo Prefecture, is one of the Special A districts, designated as premium sake rice producing areas comparable to the grand cru classification in wine. This junmai daiginjo is named in honor of Tajiri Nōen (田尻農園), a farm with fields in this district where a father and son have devoted many years to growing sake rice with great passion. The brewery contracts the farm to grow Yamada Nishiki, often called the "king of sake rice," and the rare Aiyama rice. So that drinkers can enjoy the character and appeal of the rice the farmers grew with care, the sake is brewed to the same specifications for polishing ratio, koji mold, and yeast, with the rice variety as the only variable. The brewery also recommends savoring the differences between vintages (year-to-year variation). Release: November, limited shipment.
