About

Just before pressing, a very small amount of brewing alcohol is added. This draws out the refined aroma hidden in the moromi (fermentation mash) and gives the sake a refreshing, clean finish. Designed with pairing in mind for dishes made from fresh, seasonal fish caught in Suruga Bay, this is a daiginjo in the Shizuoka style. Limited release (April and September; limited shipments) Rice polishing ratio: koji rice 40%, kake rice (rice for the moromi) 50%
