The Kyokai No. 12 yeast, 14% alcohol and undiluted unpasteurized nama specification suggest moderate aroma and a lively, fuller texture. Medium sweetness is inferred from the living, unpasteurized character.

About

The concept is a story that returns once every twelve years (rinne tensho, reincarnation). In HIRAN, "nama" is not defined simply as fresh sake, but as living sake, meaning namazake (unpasteurized sake). For this reason, fermentation proceeds differently in each bottle, so each customer has a different story. We welcome the new year and hope that at a time that suits you, more people will enjoy this twelve-year story (rinne tensho), which begins in 2024, the Year of the Dragon. Next scheduled shipment: late December Alcohol content may vary by lot. Information as of January 2024.
