About

Hase Shokichi (1932-2009), the late master brewer regarded as the foremost of the Four Heavenly Kings of the Noto toji (master brewers from the Noto Peninsula), served as master brewer at Doi Shuzojo for 40 years from 1968. Today it is no longer unusual for a sake to bear the name of its master brewer, but this Kaiun Daiginjo Den Hase Shokichi is said to be the first sake to carry the name of a master brewer. A small amount of brewer's alcohol is added at the final stage, giving the sake a crisp, clean taste.
