About

Freshly pressed sake still contains living yeast. For this reason, the sake must be heated to 65 degrees Celsius to halt yeast activity. This process is called pasteurization (hiire), but heated sake loses much of its freshness unless it is cooled quickly. Kaiun Hiyazume Junmai is heat-pasteurized and then rapidly chilled using specialized equipment, sealing in the fresh character of namazake (unpasteurized sake). Young, fresh aroma and a slightly dry, clean finish.
