About

Yamada Nishiki, said to be the king of sake rice, is grown in Hyogo Prefecture's Tokutei A district (特A地域) and used to brew this sake. It is finished with a soft mouthfeel in which umami shines and a well-balanced interplay of acidity and sweetness. It is released as namazake (unpasteurized sake). Generally, sake brewed with Omachi tends to be light and crisp, but Kaiun's Omachi is a dry sake with a rich body, a clean finish, and an exquisite balance. It offers an elegant flavor with a firm core. In June 2019, it received a gold medal in the Junmai Daiginjo category at KURA MASTER 2019.
