The text's fragrant rice character from Yamada Nishiki and the 58% polish of this junmai ginjo point to a clearly aromatic profile. SMV 7 to 8, the dry description and the clean finish keep the body light-leaning and sweetness low, while the genshu raw bottling adds some density.

About

I had understood that Banshu Yamada Nishiki is a very good rice, but out of a commitment to using 100% Niigata-grown rice, I had refrained from using rice from other prefectures. This season, Niigata-grown Yamada Nishiki became available to us, so I refined our skills further and challenged myself to brew a dry junmai ginjo that expresses the character of our brewery.
