About

We had understood that Banshu Yamada Nishiki is a very good sake rice, but out of our commitment to using only Niigata-grown rice (100%), we had refrained from using rice from other prefectures. This season we were able to obtain Niigata-grown Yamada Nishiki, so we took on the challenge of making a dry junmai ginjo that expresses the character of our brewery, refining our technique further.
