About

This is a new challenge that differs from the conventional Sotembo, which is brewed in the tanrei umakuchi style (light and clean yet full-flavored). For that reason, we named it "Gaiden," meaning side story. With a sake meter value (SMV) of +10.0, this is a dry sake. However, we aimed to create a junmai sake that is more than simply dry. From raw material handling to the timing of pasteurization, we carefully attended to the subtle details throughout brewing. It has no heaviness and is clean and smooth, easy to drink without fatigue. It has a crisp finish, so it does not get in the way of food. The product is pasteurized twice to ensure quality control. Gaiden Dry Junmai Shu is sold year-round in limited quantities. Because production volume is limited, it is sold exclusively through Yuragi Sotembo retailers.
