The 40% polishing, SMV +3 and acidity 1.4 point to a soft, mildly sweet profile, and the brewer's note of choosing a flavor-focused yeast over a fragrant one supports a restrained aroma. Expect gentle umami with a light-to-medium body.

About

We struggled to choose a yeast, but we did not use caproic-type yeast (a yeast known for its strongly fragrant aroma). Instead, we chose Kumamoto yeast, which places emphasis on flavor. This time we set the sake meter value (SMV) to +3, resulting in a soft, rich-flavored sake with a savory character. We hope you enjoy its refined and delicate taste. It is best served chilled or at room temperature.
